As many of you know, it is summer time in the Philippines and it is very hot everyday. Sometimes, on these hot summer days, Mama makes me my favorite summer treat. It is Ube-Mango ice cream with M & M candies.
I know that many of you don’t know what ube is, so I asked Mama what it is and where it comes from.

Mama said ube (or ubi) is the Filipino word for purple yam. It contains pigments that gives its violet color. In the Philippines, ube is cooked with sugar and eaten as a dessert or jam called ube halaya which is a bright violet color. Ube is also an ingredient in the fruity dessert halo halo, a popular Filipino dessert.

Ube is used in a variety of desserts, as well as a flavor for ice cream, milk, Swiss rolls, tarts, cookies, cakes (pictured left), and other pastries. Ube also sometimes is used in the Philippines to denote the colour purple or violet.

Mango is a wonderful fruit that is grown in frost-free areas of the world. It is a very healthy fruit that is very high in vitamin C. The Philippines’ variety of mango is known, world-wide, as being one of the best and sweetest. Currently, Philippine mangos are exported all around the world.
Now, my secret is to let the M & M candies stay in the ice cream long enough so the the different colors start to come off the candies and mix with the colors (purple and yellow) of the ice cream. When you stir it all up, it makes colors like a rainbow. Now, you know that rainbows are my favor thing in the whole world and the good thing is it is yummy too.
